Ingredients for the Clementine Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
Ingredients for the Premix (yields 850ml, enough for 10)
400ml premium vodka

150ml peach liqueur
200ml citrus syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, to finish
Directions
To prepare the Syrup: Put the listed items in a pan, heat until it reaches a gentle boil, mixing so the sugar melts. After that, take off the burner and leave to reach room temperature fully. Pour to a sterilised bottle, close it and store chilled, it will last for around a month.
Preparing the Premix: Combine all the liquid ingredients into one big jug, let it rest for 60 minutes, then pass it through best through muslin, so it's fully clarified.
When ready to serve: Pour 85ml of the cocktail base to a stirring glass filled with ice, and stir lightly for one minute to cool it down. Pour to a frosted cocktail glass or a similar vessel, garnish with a few cranberries adding the final touch by giving it a brief mist of the essential oil above the glass.
